Cinco de Mayo Love Cookies



Celebrate Cinco de Mayo with these delectable love cookies made with white chocolate chips, dried cranberries, and chopped pecans.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a medium bowl, whisk together the flour, baking soda, and salt

In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy

Beat in the egg and vanilla extract until well combined

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the white chocolate chips, dried cranberries, and chopped pecans

Scoop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
