Roasted Tomato Soup with Goat Cheese



A tasty and creamy soup that is good for people on the keto diet. It is made with roasted tomatoes and tangy goat cheese.

Ingredients:

  • 1
  • 5 lbs cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • 4 oz goat cheese, crumbled
  • Fresh basil leaves for garnish

Instructions:

Preheat oven to 400F 200C

Toss cherry tomatoes and minced garlic with olive oil on a baking sheet

Season with salt and pepper

Roast in the preheated oven for 25-30 minutes, or until tomatoes are soft and slightly caramelized

Transfer roasted tomatoes and garlic to a blender

Add chicken or vegetable broth

Blend until smooth

Pour the blended mixture into a pot and heat over medium heat until warmed through

Season with additional salt and pepper if needed

Serve hot, garnished with crumbled goat cheese and fresh basil leaves
