Vegan Burrito Stuffed Peppers



These Vegan Burrito Stuffed Peppers are a flavorful and nutritious twist on traditional stuffed peppers. Packed with quinoa, black beans, corn, and spices, they are hearty and satisfying. Topped with creamy avocado salsa, they make a perfect gluten-free and vegan meal.

Ingredients:

  • 4 large bell peppers, halved and seeds removed
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • Juice of 1 lime

Instructions:

Preheat your oven to 375F 190C

In a large mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, red onion, garlic, cumin, chili powder, paprika, salt, and pepper

Mix well

Spoon the mixture evenly into the halved bell peppers, pressing down gently to pack the filling

Place the stuffed peppers in a baking dish, cover with aluminum foil, and bake for 25-30 minutes, or until the peppers are tender

While the peppers are baking, make the avocado salsa by combining diced avocado, chopped cilantro, and lime juice in a small bowl

Season with salt and pepper to taste

Once the peppers are done, remove them from the oven and top with avocado salsa before serving
