You can enjoy the classic tastes of chicken parmesan in a lighter way. This recipe is healthier because it uses less cheese and whole wheat breadcrumbs. It still tastes great.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 cup marinara sauce
- 1/2 cup shredded part-skim mozzarella cheese
- Fresh basil leaves, for garnish
Instructions:
Preheat oven to 400F 200C
In a shallow dish, combine breadcrumbs, Parmesan cheese, oregano, garlic powder, and black pepper
Dip each chicken breast into the breadcrumb mixture, coating both sides evenly
Place coated chicken breasts on a baking sheet lined with parchment paper
Bake for 20 minutes or until chicken is cooked through
Remove from oven and spoon marinara sauce over each chicken breast
Sprinkle shredded mozzarella cheese on top of each chicken breast
Return to oven and bake for an additional 5 minutes, or until cheese is melted and bubbly
Garnish with fresh basil leaves before serving
