We cooked this hearty gluten-free beef stew in a Dutch oven. Just right for a cozy dinner!
Ingredients:
- 1 lb beef stew meat
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and cubed
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Chopped parsley for garnish optional
Instructions:
Heat olive oil in a Dutch oven over medium heat
Add chopped onion and minced garlic, saut until fragrant
Add beef stew meat, cook until browned on all sides
Stir in carrots and potatoes
Pour in beef broth and add dried thyme and rosemary
Season with salt and pepper to taste
Cover and simmer for 1
5-2 hours, or until meat is tender and vegetables are cooked through
Garnish with chopped parsley before serving, if desired
