Miso Tofu Stir Fry with Cauliflower Rice



This Miso Tofu Stir Fry with Cauliflower Rice is a flavorful and nutritious dish that's quick and easy to make. The combination of miso paste, soy sauce, and sesame oil creates a delicious umami flavor, while the tofu and vegetables add protein and vitamins. Cauliflower rice makes it low-carb and gluten-free, perfect for a healthy meal option.

Ingredients:

  • 200g firm tofu, cubed
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cups cauliflower rice
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • 1 tablespoon vegetable oil

Instructions:

In a bowl, mix miso paste, soy sauce, sesame oil, rice vinegar, and honey/maple syrup

Add cubed tofu to the mixture and let it marinate for 15-20 minutes

In a large skillet, heat vegetable oil over medium-high heat

Add minced ginger, garlic, and sliced onion

Saut until fragrant

Add marinated tofu and bell pepper slices

Cook until tofu is golden brown

Stir in cauliflower rice and cook until heated through

Sprinkle with chopped green onions and sesame seeds

Serve hot and enjoy!
